Excellent cook books that I’ve been studying.

In the last few days I’ve been reading “Ingredients”, an excellent book that every cook should have. 2,500 world ingredients with classic recipes, from spices, aromatic herbs, fruits, to meats, fishes, oil, cheeses… very easy to understand with illustrating pictures. I’ve been also using this for my Vietnamese kitchen staffs in Angelina restaurant.

I have plenty of cook books and love all of them. But lately some of them have been my bedside book like: Carne by Alain Ducasse – Italian version (Alain Ducasse’s Culinary Encyclopedia in English), Alinea – one of the best restaurants in the world, showcases Chef Achatz’s more than 100 recipes, and Noma – best restaurant in the world 2010….
