This time I was inspired by a winter place which reminds me of when I used to go to pick up the chestnuts with my grandparents.

Some memories when they come back to the mind always give a great sense of joy…… ..thinking about when my father and I used to come back home with full bags of mushrooms after picking them and see my mom getting angry because there was so much cleanā€¦.

These feelings stay inside you till the moment when they explode, and make you create delicate dishes but with a strong flavor that bring my mind down the memory lane and make me live again those situations that I had forgotten.

The salad of mushrooms was created by thinking about how good the pecorino cheese mix with the artichokes and mushrooms. As last touch I gave a new twist to the flavor by adding the passion fruit.

The beef carpaccio rolled in beef tartare (I cleverly called it cannelloni) served on a wooden platter to emphasize the importance of nature and its colorful variations is also a very interesting dish.
The Tagliatelle pasta are definitely one of those items that are a must to be included in the menu.

A very traditional technique but with good ingredients like PORCINI MUSHROOMS-PARMESAN TRUFFLE and you canā€™t go wrong !!!!!

Definitely stronger in the taste is the lamb with porcini mushroom ketchup and a pepper consumme served and smoked at the table to make people remember the scents of the house when outside was cold the family was all inside trying to get warmer eating the chestnuts cooked on the grill.
